Some of the wildflower from 2025 has plenty of knotweed and is pretty dark this was all bottled in pints and half-pints. There is just enough lighter honey like blackberry and fireweed to make the jar glow red when a light is place behind the jar. The strong flavor of knotweed honey is milder and makes last year's wildflower quite delicious. The quarts we have available are much lighter in color. But equally delicious.
